🍴 Ingredients:

Tandoori Jackfruit:

  • 1 can young green jackfruit, drained and shredded
  • 2 tbsp plain yogurt (or coconut yogurt)
  • 1 tbsp tandoori spice mix
  • 1 tsp lime juice
  • Salt to taste

Coconut Slaw:

  • 1 cup shredded red cabbage
  • ¼ cup grated coconut (fresh or desiccated)
  • 1 tbsp lime juice
  • 1 tsp honey
  • Pinch of chili flakes

Tortillas:

  • 4 small corn tortillas

🥄 Instructions:

  1. Mix jackfruit with yogurt, tandoori spice, lime. Roast or sauté until browned and crispy on edges.
  2. Toss slaw ingredients.
  3. Warm tortillas, fill with jackfruit and slaw. Optional: add mint chutney or tamarind sauce.

  • Great texture from jackfruit.
  • Nutrient-rich and gluten-free.

❌ Cons:

  • Jackfruit texture isn’t for everyone.
  • Needs multiple pantry ingredients.
