🍴 Ingredients:
Tandoori Jackfruit:
- 1 can young green jackfruit, drained and shredded
- 2 tbsp plain yogurt (or coconut yogurt)
- 1 tbsp tandoori spice mix
- 1 tsp lime juice
- Salt to taste
Coconut Slaw:
- 1 cup shredded red cabbage
- ¼ cup grated coconut (fresh or desiccated)
- 1 tbsp lime juice
- 1 tsp honey
- Pinch of chili flakes
Tortillas:
- 4 small corn tortillas
🥄 Instructions:
- Mix jackfruit with yogurt, tandoori spice, lime. Roast or sauté until browned and crispy on edges.
- Toss slaw ingredients.
- Warm tortillas, fill with jackfruit and slaw. Optional: add mint chutney or tamarind sauce.
✅ Pros:
- Vegan, tropical, bold and satisfying.
- Great texture from jackfruit.
- Nutrient-rich and gluten-free.
❌ Cons:
- Jackfruit texture isn’t for everyone.
- Needs multiple pantry ingredients.
