🍴 Ingredients:

Ice Cream Base:

  • 1 cup heavy cream
  • 1 cup whole milk
  • ÂĽ cup sugar
  • 80g blue cheese (Gorgonzola or Roquefort), crumbled

Pear Compote:

  • 2 ripe pears, peeled and diced
  • 1 tbsp honey
  • ½ tsp thyme
  • Splash of white wine or water

Walnut Crumble:

  • ½ cup chopped walnuts
  • 1 tbsp butter
  • 1 tbsp brown sugar

🥄 Instructions:

  1. Heat milk, cream, and sugar until steaming. Add blue cheese, stir until melted. Chill, then churn in an ice cream maker.
  2. Simmer pears with honey and thyme until soft and syrupy.
  3. Toast walnuts in butter and brown sugar.
  4. Scoop ice cream with compote and crumble on top.
