Ingredients:

  • 1 head romanesco, cut into florets
  • 1 tbsp olive oil
  • Salt and pepper

Black Sesame Tahini:

  • 2 tbsp tahini
  • 1 tbsp black sesame paste (or ground black sesame seeds)
  • 1 tsp lemon juice
  • Water to thin

Pickled Mustard Seeds:

  • 2 tbsp yellow mustard seeds
  • 1/4 cup vinegar
  • 1/4 cup water
  • 1 tsp sugar
  • Pinch of turmeric (optional)

👩‍🍳 Instructions:

  1. Roast romanesco at high heat until charred but firm.
  2. Mix tahini, sesame, lemon juice, thin to drizzle consistency.
  3. Simmer mustard seeds in vinegar mix until plump (10 mins).
  4. Plate romanesco with tahini drizzle and pickled seeds.
