Ingredients:

  • 4 large ripe tomatoes
  • 2 balls of burrata cheese
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 garlic clove (minced)
  • 1 tbsp fresh basil (chopped)
  • Salt and pepper (to taste)
  • Balsamic glaze (optional, for drizzling)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Prep the tomatoes: Cut the tops off and scoop out a little of the inside to make room for filling.
  3. Stuff them: Tear burrata and place inside each tomato.
  4. Make breadcrumbs: Sauté breadcrumbs with olive oil, garlic, and basil until golden and crisp.
  5. Top & roast: Spoon breadcrumbs over burrata. Bake tomatoes for 15–20 minutes, until skins are soft and cheese is warm.
  6. Serve: Drizzle with balsamic glaze and sprinkle with more herbs if you like.

Cons:

  • Burrata can be pricey or hard to find
  • Needs ripe tomatoes for best flavor
