Ingredients:
- 4 large ripe tomatoes
- 2 balls of burrata cheese
- 1/2 cup breadcrumbs
- 2 tbsp olive oil
- 1 garlic clove (minced)
- 1 tbsp fresh basil (chopped)
- Salt and pepper (to taste)
- Balsamic glaze (optional, for drizzling)
Instructions:
- Preheat oven to 375°F (190°C).
- Prep the tomatoes: Cut the tops off and scoop out a little of the inside to make room for filling.
- Stuff them: Tear burrata and place inside each tomato.
- Make breadcrumbs: Sauté breadcrumbs with olive oil, garlic, and basil until golden and crisp.
- Top & roast: Spoon breadcrumbs over burrata. Bake tomatoes for 15–20 minutes, until skins are soft and cheese is warm.
- Serve: Drizzle with balsamic glaze and sprinkle with more herbs if you like.
