A perfect balance of sweet, spicy, and tangy flavors with a tropical twist!
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 ripe mango (pureed)
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp chili flakes (adjust to taste)
- 1/2 tsp smoked paprika
- 1 clove garlic (minced)
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
- Make the Glaze: In a bowl, mix mango puree, honey, soy sauce, lime juice, chili flakes, paprika, and minced garlic.
- Marinate: Season chicken breasts with salt and pepper, then coat them with half of the glaze. Let it marinate for 30 minutes.
- Cook: Heat olive oil in a pan over medium heat. Cook the chicken for 5-7 minutes per side until golden brown and cooked through.
- Glaze: Pour the remaining glaze over the chicken in the last minute of cooking. Let it caramelize slightly.
- Serve: Garnish with fresh cilantro and serve with rice or grilled veggies.
